Overall health and risk for degenerative disease are inextricably linked to dietary practices. This course teaches the fundamentals of what comprises a whole-food, plant-based diet from the leading expert in the field, Dr. T. Colin Campbell, Ph.D.
Topics covered include the state of health and healthcare in the United States, nutrient fundamentals, a new view on protein and fat, and the results from the China Project, the most comprehensive study to date of the link between diet and disease, directed by Dr. Campbell. This course introduces the power of an optimal diet in terms of disease prevention and risk reduction.
